The origins

The childhood is important for one chef.

I say that because many memories are created through what we smell.

My family farm, this amazing house is aprox. 1000 years old. In Basque Land we call it "Caserio". Here i passed most of my childhood, second school for me.

One of my great experiences was a trip to one of the carrot producers in Norway. That smell of fresh carrots sent me back 30 years, to one field of carrots I had been during my childhood. I know it sounds silly but that was great.
